About the Cook for an evening

A cook comes to the property and makes a Goan dinner in your kitchen. Cooking and clean-up are included; ingredients are billed separately at cost.

Goan home cooking draws on rice, fish, coconut, local spices and souring agents such as kokum, tamarind and vinegar. The Catholic tradition brings dishes such as xacuti, cafreal, vindaloo, sorpotel, prawn balchão and the layered dessert bebinca. The Hindu tradition includes fish curry with rice and vegetarian dishes such as khatkhate, tondak and varan.

What is xacuti?

A Goan curry made with roasted grated coconut and spices, usually with chicken or lamb.

What is cafreal?

A green masala of coriander leaves, green chillies and spices, used mostly to marinate chicken or fish.

Is vindaloo the same as the curry-house version?

Traditional Goan vindaloo is a spicy pork dish with vinegar. It does not include potatoes.

Are there vegetarian Goan dishes?

Yes. Examples include khatkhate, a mixed vegetable dish; tondak, made with beans and cashews; and varan, a lentil dish often made with coconut milk.
